1 1/3 cups yellow cornmeal
1/4 cup shedded uncoked white potatoes,
peeled
1 teaspoon baking powder
2 cups skim milk
1 Tablespoon lemon juice
2 egg whites, lightly beaten
2 Tablespoons chopped fresh onions
(scallions)
nonstick cooking spray

Directions:
Directions:
1. In a large bowl, combine the cornmeal,
potatoes, and baking powder.
2. Add the milk and lemon juice.
3. Stir in the egg whites and scallions.
4. Spoon about 2 taablespoon of batter into a hot
nonstick skillet lightly coated with nonstick
cooking spray.
5. Cook on each side for 2 minutes or until
brown. Makes 12 servings.

Per serving: 80 cal, 15 g carb, 1 mg chol, 260 mg
sodium, 3 g prot, 1 g fat, *calories from fat =4
