1 lb ground beef
2 cans pinto beans with green chili
2 cans diced tomatoes with green chili
1 onion, diced
garlic, diced (to taste)
3-4 c shredded cheddar cheese
2 10-oz cans enchilada sauce, red or green
salt and pepper to taste
burrito sized flour tortillas

Directions:
Directions:
Preheat oven to 350º. Brown ground beef; add onion and garlic and continue cooking until onion is translucent. Mix browned beef, onion and garlic with pinto beans and diced tomatoes and 1 cup of the cheese. Add salt and pepper to taste.

Roll mixture into flour tortillas as though making burritos. Place burritos fold-side down in large baking dish. Repeat until baking dish is full. Pour enchiladas sauce over the top and cover with shredded cheese. Bake for approximately 1 hour, or until cheese is browned. Serve with sour cream, shredded lettuce, diced tomatoes and diced olives.
