1 1/2 pound fresh okra
1 egg white
2 teaspoon freshly ground black pepper
1 teaspoon chili powder
1/2 cup cornmeal
Nonstick cooking spray

Directions:
Directions:
1. Wash and dry the okra (Cut of the stems on
the okra)
2. In a large bowl, beat egg white well and mix
in the black pepper and chili powder.
3. Toss the okra in the egg white mixture,
coating each piece well.
4. Remove the okra and roll in the cornmeal.
5. spray some cooking spray in a hot cast-
iron skillet.
6. Place the okra in the skillet and cook on
each side 5 to 7 minutes (or until it turn
brown).


Makes 8 serving
