3 cups thinly sliced zucchini with peel on
1 cup Bisquick® baking mix
1/2 cup finely chopped yellow onion
1/2 cup Parmesan cheese
2 Tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon seasoned garlic salt
1/2 teaspoon dried marjoram or oregano leaves
1/4 teaspoon black pepper
1 clove minced garlic
1/2 cup extra virgin olive oil
4 eggs slightly beaten

Directions:

Heat oven to 350º Grease 9x13x2 glass baking dish
Mix all ingredients in bowl by hand except zucchini. Fold in zucchini. Spread into baking dish. Bake until golden, about 25 minutes. Cut into 1x2 inch pieces.
