Raw chicken or turkey pieces in amount desired

Marinade:
1 C. dry red wine
1/2 C. bourbon
1/2 C. sherry
1/2 C. soy sauce
3 T. vegetable oil
2 T. sugar
5 star anise
1 T. fresh ginger, minced
pepper to taste

Combine marinade ingredients and marinate chicken or turkey pieces for at least 1 hour in refrigerator. Place chicken in baking pan and pour half of marinade over chicken and bake at 325 for 1 hour, basting occasionally. Discard any unused marinade. Raise oven temperature to 450.

Glaze:
1-1/4 C. bourbon
2/3 c. honey
2/3 C. ketchup
1/4 C. brown sugar

Brush chicken or turnkey with glaze and bake for additional 30 minutes.
