1 cube butter
3 c long grain white rice
1 med onion, chopped med
6 c broth, chicken or vegetable
salt and pepper

Melt butter in saute pan. Saute onion and rice until rice is lightly browned. Heat broth and pour into overproof casserole. Add sauteed rice and onion to broth. Add salt and pepper to taste. Bake uncovered 375º for 30 min. Stir and bake 10 min more. Serves 10-12.

I often saute in some sliced mushrooms to this. Also you can break up thin spagetti noodles . (1" long) or add a 1/4 cup of orzo and saute with rice
