Ingredients:
Ingredients:
3 ripe avocados
1 tomato, seeded and diced
1/3 of an onion, finely diced
1 jalapeņo pepper, seeded and finely diced
3 cloves of garlic, minced
3 fresh limes
Salt & freshly ground black pepper to taste

Directions:
Directions:
Remove avocados from peel and place in bowl. Fork mash,
leaving some good chunks in it, or not if you like smushy
guacamole. Add tomato thru garlic, deciding on how much
jalapeņo to use according to the taste of the crowd you're
feeding. I have made it without any jalapeņo and it still goes
over quite well. Once I put in about 1/2 of a good size
jalapeņo and the real wimps in the crowd thought it
was great. Squeeze in the juice of 3 limes.
I personally think this is one of the things that makes
everyone love this guacamole.

About 15 minutes if you're alone in the kitchen and haven't started having Margaritas yet...

Personal Notes:
I really do love the zip the lime
juice adds to this recipe. I hesitated to use the jalapeņo
at first, but I mince it finely and it just adds another layer
of flavor and no one bites into a chunk of the pepper.
