2 cans Black-Eyed Peas (15.5 oz)
1 large Tomato, chopped and seeded
1 medium Red Bell Pepper, chopped
1 medium Green Bell Pepper, chopped
1/2 Red Onion, chopped
1 stalk Celery, chopped
1 tbsp. Parsley
3 tbsp. Balsamic Vinegar
2 tbsp. Olive Oil
Salt and Pepper to Taste

Toss black-eyed peas, tomato, bell peppers, onion, celery, and parsley. In separate small bowl, mix vinegar, olive oil, salt, and pepper. Toss into vegatables. Cover and refrigerate overnight.
