1/4 c. butter
1/4 c. chopped onion
1/4 c. flour
1 can (14.5 oz) chicken brother
1 can evaporated milk
2 or 3 large potatoes, baked or microwaved

Toppings
crumbled bacon
shredded cheddar cheese

Directions:
Directions:
Melt butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 mins. Stir in flour. Gradually stir in broth and milk. Scoop potato pulp from one potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Dice remaining potato skin and potatoes; add to soup. Heat thorough.
Spoon into bowls, add toppings.
