1 1/4 c brown sugar
1 c low-fat vanilla yogurt
2 eggs
2 tbsp vegetable oil
2 tbsp skim milk
1 tbsp vanilla
1 c all purpose flour
½ c whole wheat flour
1 tsp baking soda
2 tsp ground cinnamon
½ tsp salt
3 c oatmeal (quick or old-fashioned, uncooked)
1 c diced dried fruit (raisins, cranberries, blueberries, cherries) or 1 c fresh or frozen blueberries
1 c chopped pecans

Directions:

Preheat oven to 350º. In large bowl combine sugar, yogurt, eggs, oil, milk and vanilla; mix well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats, fruit and nuts. Spread dough onto bottom of ungreased 13x9 inch baking pan. Bake 28-32 minutes or until light golden brown. Cool completely. Cut into bars. Store tightly covered. Freezes well.
