Ingredients: 2 pounds of sweet Italian sausage 1 large or 2 medium onions, sliced Olive Oil 2 Green Peppers, sliced Package of Hoagie Rolls

Directions: |
Directions:Slit sausage and cook in small amount of olive oil. In a separate frying pan, sauté onion and green peppers.
Place sausage in roll and top with green peppers and onion.

Notes: I don't know an Italian family that doesn't make sausage and peppers. We make it in the summer or winter. In the summer, we grill the sausage outside on the grille and add the peppers and onions for a delicious hoagie sandwich. Great for family picnics, too. I remember going to the San Janero feast in NYC. You could smell the sausage and peppers from blocks away. Great food! There were so many people at the festival that Rick and I would have to tie ourselves together so we wouldn't get separated. I have never seen anything like it. However, there was no shortage of sausage and pepper tents along the street. The scent of these foods cooking together made you pretty hungry! Grandma Cassara would make homemade sausage right in her own kitchen. I will never forget watching and getting ill thinking that the casing is really the intestine of some animal!
