Use thick sliced bread for best results!

Beat 6 eggs
½ to ¾ cups milk
2 pinches of sugar
½ tspn. of vanilla
Cinnamon
3 Tblspns. butter or margarine
Powdered Sugar

Directions:

Beat eggs, milk, sugar, vanilla in bowl. Sprinkle with cinnamon and swirl with fork.

Heat skillet with butter or margarine on medium heat. Dredge bread slices into egg mixture. Add to skillet and cook on both sides of bread. When golden brown, remove from skillet. Sprinkle with powdered sugar. Serve with maple syrup and blueberries or strawberries (optional).

I used to make this for my family on Saturday or Sunday mornings as the children were growing up. Sometimes we even had it for supper. This reminds me of my own childhood years, when Mom would make it for Dad and me. When I went to East Tennessee to visit my friend, Fr. Dan Whitman, I made this for breakfast at the Rectory. Unfortunately, I had to leave in a hurry to make my son, Ken's, football game in Nashville, so I left him with all the dishes!

If you want to make it fancy, sprinkle with powdered sugar. Otherwise, that really isn't necessary. The taste is great without it, but it does dress it up for a fancier presentation. Vanilla really makes it special. Try Haitian vanilla for a change. It is a little different but yummy!
