1 c water
1/4 c red-wine vinegar
2 tsp honey
1/4 tsp salt (optional)
1/4 tsp hot pepper sauce (optional)
2 large unpeeled cucumbers
1 small red onion, thinly sliced (about 3/4 c)
1 tbsp chopped fresh dill or 1 tsp dried dill
fresh dill springs for garnish

Directions:
Directions:
In a large glass or ceramic bowl, combine the water, vinegar, honey, salt, and hot pepper sauce. Mix well.
Thinly slice cucumbers. Add cucumbers, red onion and chopped dill to the marinade. Gently toss until ingredients are well combined.
Cover bowl with plastic wrap. Let stand for at least 1 hour at room temperature or refrigerate for up to 4 hours.

Just before serving, toss well. Using a slotted spoon, place the cucumbers on a serving plate. Garnish with fresh dill sprigs.
