2 lbs. carrots, peeled and cut into large pieces
6 T. extra virgin olive oil
2 T. white wine vinegar
3 tsp. harissa
1 tsp. ground cumin
½ tsp. ground ginger
salt & pepper to taste

Directions:
Directions:
Boil carrots until very tender, about 20 minutes. Drain and return to pot, tossing over medium heat until dry. Coarsely mash with potato masher or fork. Stir in remaining ingredients and set aside for 30 minutes or overnight (in refrigerator) to let flavors blend. Season, transfer to bowl and serve with crusty bread or spicy chips.
