4 boneless pork loin chops
1/2 tsp. vegetable oil
1/2 c. apricot jam
1 tbsp. prepared mustard
1 tbsp. vinegar

Directions:
Directions:
Brown chops in oil in large nonstick skillet; turn chops. Stir in jam, mustard and vinegar. Cover and simmer gently for five minutes. Serve with cornbread and your favorite vegetable.

Any other fruit jam can be substituted. Great done with cranberry sauce for a holiday dinner.
