1/2 c. milk
3/4 c. cornmeal
1 tbsp. Cajun seasoning
1/4 tsp. salt
11/2 lb. catfish fillets (4 fillets)
lemon wedges

Directions:
Directions:
Heat oven to 400º. Spray a baking sheet with nonstick cooking spray. Pour milk into a deep plate. Mix cornmeal, seasoning and salt in another plate. Dip each fillet in milk, then the cornmeal mixture to coat both sides. Transfer to baking sheet.
Bake 10 minutes, turn fillets over and bake 10 minutes longer until fish is opaque in the center. Serve with lemon wedges.
