1/2 tsp of hot pepper flakes (optional) I like everything hot.
3-4 Tbsp of olive oil
3 scallions chopped
4 lg tomatoes chopped
lots of oregano (fresh or dried)
feta cheese 4-6 ounces crumbled
1 can black olives sliced.
salt & pepper to taste. (cool it on the salt)
Angel Hair Pasta or your choice

Directions:
Heat olive oil with pepper flakes, and scallions. Add tomatoes. Simmer a bit and add oregano. I add enough oregano to cover the top of sauce. Simmer a bit more. Add the olives. Now start preparing the pasta. When the pasta is half way done, add the feta cheese to the sauce but do not blend right away. as soon as pasta is cooked, then blend the feta cheese into sauce. (This leaves it a bit crumbly instead of it all dissolving into the sauce.) Serve over pasta and enjoy
