2 lbs. (4 large) baking potatoes, peeled and cut into 1 in. chunks
3/4-1 c. hot milk
2 tbsp. butter, cut up
4 oz. sliced American cheese, stacked and cut in 1/2 in. squares
3/4 c. shredded extra-sharp cheddar cheese
1/2 tsp. freshly ground black pepper
1/4 tsp. salt
pinch cayenne pepper

Directions:
Directions:
Cook potatoes in water to cover 13-15 minutes, until very tender. Drain in a colander. Return potatoes to pot and stir over medium heat 1-2 minutes, until dry and floury. Mash, adding half the milk and the butter. Add cheeses, then remaining milk and seasoning and beat with a wooden spoon until cheeses have melted and potatoes are creamy.
