2 1/4 Lbs Gold Yukon Potatoes
1 3/4 c. flour
pinch of salt

Directions:
Directions:
Steam potatoes for 30-45 minutes. Peel and mash while still hot. Season with salt. Slowly knead in flour until dough is fairly firm, smooth and isn't sticky. Roll dough into snakes about as thick as your thumb. Cut into 1 inch pieces and score crosswise with a fork.

Cook in salted boiling water for about 1-2 minutes or until they start to rise to the top.
