1-10oz. can diced tomatoes and green chilies, divided
1-16oz. can Refried Beans
8 prepared (fried) tostada shells
1-1/2 cups shredded cooked chicken, warmed, divided
1 cup shredded lettuce, divided
1 cup shredded cheddar and monterey jack cheese blend, divided
Sour cream and sliced black olives (optional)

Reserve 1/4 cup tomatoes and set aside. Blend the remaining tomatoes with the beans in a small saucepan. Heat bean mixture over medium heat until hot.

Prepare tostada stacks by layering one shell with 1/8 of each of the following: bean mixture, chicken, lettuce, and cheese. Place another shell on top and repeat layers. Sprinkle each stack with 1 T. reserved tomatoes. Serve with sour cream and black olives, if desired.

For no-cook convenience, use rotisserie chicken from the grocer's deli. You can also substitute 1 lb. ground beef for the chicken, cooked with a pkg. of taco seasoning according to the package directions.
