1 (4 lb.) pork loin
1/4 C. Dijon mustard
2 T. bold and spicy mustard
2 T. olive oil
1 T. each chopped fresh thyme and rosemary
1 clove garlic, crushed through press
1 tsp. each paprika and onion powder
1/2 tsp. cayenne pepper

Directions:
Directions:
Combine all ingredients and spread over a 4 pound pork loin. Place in zip-lock bag overnight. Preheat oven to 325. Remove from zip lock bag, insert meat thermometer in thickest part of loin and place in shallow roasting pan. Bake for 45 minutes. Remove from oven and pour 1/2 C. wine or water over roast. Tent with foil. After 30 minutes more, pour another 1/2 C wine or water over roast and bake until thickest part of pork loin reads 160. Let rest 15 mins. before slicing. Serve with Bernaise Sauce.
