1 chicken breast
2 cups chicken broth
1 tablespoon cornstarch dissolved
in 1/2 cup cold water
1 small thinly sliced onions
3 stalks celery sliced on 1" diagonal
1 red bell pepper, julienne cut
10 sliced mushrooms
2 cups bean sprouts
8 ounces water chestnuts
Chow mein noodles -- OR rice

Directions:

Saute chicken in a nonstick pan for 5 minutes.
Combine 1 1/2 C. stock with soysauce and bring to a boil, add corn starch til thickened. Reduce heat.
In a wok, heat 1/2 c stock; add onions, celery and stir fry for 2 to 3 minutes. Add pepper and mushrooms and stir fry for 2-3 minutes. Add bean sprouts and mushrooms and stir, heat for 2 mintues. Remove from heat.
Pour sauce over vegetables and toss.
Add chicken.
Serve with Rice or chow mein noodles.
