Sour Cream Enchiladas Recipe

2 lbs chicken or ground beef (choose one)
1 med onion chopped
2 ( 4 0z) can diced green chiles
1 (16 oz) ctn sour cream
2 cans cream of chicken soup
12 flour tortilla
8 oz jack cheese

Directions:
Directions:
Brown beef or cook chicken, sauté onion and 1 can green chiles. In a saucepan, mix the sour cream, chicken soup and 1 can of green chiles. Heat until warm. In a 9 x 13 pan pour 1/2 of the sour cream sauce. Then put 2 large spoons of meat mixture in the middle of a tortilla and roll up. Repeat with remaining tortillas and arrange the rolled tortillas in the pan over the sour cream mixture. Pour all the remaining sour cream mixture on top of the tortillas and top with the grated cheese.
Bake 350º for 15- 20 min.
You can top with hot sauce or salsa to taste.
For a change you can add 1 box of thawed, chopped and drained frozen spinach to the meat mixture.
