Ingredients: 4 cloves garlic 2 cans drained garbanzo beans 1/4 c apple cider vinegar 1/4 cup water 1/4 c smooth peanut butter 1 minced chipotle chili plus one tbsp sauce (from a can of chipotle chilis in adobo sauce-put rest of can in plastic container and freeze for later) 1/2 tsp smoked paprika or chipotle chili powder 1/4 c vegetable oil 1/2 c chopped roasted red peppers salt to taste

Directions:With food processor running drop peeled garlic cloves through feed tube to finely mince. Add the garbanzo beans, vinegar, and water and pulse a few times. Scrape sides and continue processing until pureed (about 1 min). If very thick add a tbsp or so of water to thin. Add peanut butter, chipotle chili sauce and paprika and pulse until well combined. With the machine running add the oil in a slow steady stream. Stir in the red peppers and season to taste with salt. |
