1 package (8 oz) cream cheese, softened
1/3 c sugar
1 egg
1/8 tsp salt
1 c sweetened coconut flakes
1/2 c semi sweet chocolate chips
Batter:
3 c flour
2 c sugar
2/3 c cocoa
2 tsp baking soda
1 tsp salt
2 c water
2/3 c vegetable oil
2 tbsp white vinegar
2 tsp vanilla

Filling:
In small bowl beat cream cheese, sugar, egg and salt until smooth. Stir in coconut and chocolate chip; set aside. Preheat oven to 350º
Batter:
In large bowl stir together flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla; beat on medium speed for 2 minutes. Fill paper lined muffin tins 2/3 full with chocolate batter. Spoon 1 tablespoon filling into the center of each cupcake. Lightly sprinkle each cupcake with additional coconut. Bake for 20-25 minutes or until wooden pick inserted in cake portion comes out clean. Cool completely.

Variation: Prepare filling as directed but eliminate coconut. Add 3/4 cherry pie filling to filling mixture. Add 1/2 tsp almond extract if desired. or eliminate coconut and add 1/2-1 cups peanut butter chips.
