1/2 C balsamic vinegar
1 C fat free ricotta cheese
2 tsp. grated lime or lemon zest
1 pint fresh strawberries
1 ( 6 oz.) container fresh raspberries or blackberries
1 ( 6 oz.) container fresh blueberries

Directions:
Directions:
Bring the vinegar to a boil in a medium saucepan; boil rapidly until it is reduced to about 1/4 cup, about 4 minutes. Remove from the heat and let cool 5 minutes. Meanwhile, place the cheese in a food processor ( a small processor is fine for this amount) or blender and process until smooth and creamy. Scrape into a serving bowl and sprinkle with the lime zest. Stand the bowl of whipped ricotta in the center of a large serving platter. Arrange the berries around the bowl. Drizzle the berries with the reduced balsamic and serve at once.
