5 lbs. red potatoes, cut in small squares
1 lb. bacon (do not use low-sodium)
1 bunch green onions, chopped
1/4 to 1/3 bunch parsley, chopped (no stems)
3 pinches thyme
3 bay leaves
salt and pepper

Directions:
Directions:
Put all ingredients in an iron Dutch oven pot. Cook covered on top of stove until potatoes are soft. Stir periodically to prevent sticking.

My mother always used this as a stuffing for duck. It also can be used for turkey and is delicious just as a side dish.
