2 pieces of boneless chicken breast- sliced very thin - coat each piece in cornstarch.
3-4 Tbsp Olive oil
2 cloves garlic crushed
2 stalks celery cut chopped
6 green onions chopped up
1/4 of a red pepper
1 carrot cut into strips
1 cup broccoli florets
2 chicken boullion cubes dissolved in 1 cup water.

In a large frying pan add olive oil. Set heat on the lowest possible setting, add chicken slices. As it cooks gently turn so that it cooks evenly. Remove from the pan. Add more olive oil if needed. Place all vegetables into pan, increase the heat. Stir fry to el dente. Add the chicken and the boullion to the stir fry. Continuing stirring as it thickens. Add more water if necessary. Do not over cook the vegetables. Serve with white or brown rice.
