Cake:
2 c. sugar
1-1/2 c. vegetable oil
2 c. flour
4 eggs
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots
1 c. crushed walnuts (optional if there is an allergy)

Frosting:
3 oz. cream cheese
1/2 c. softened butter
2 tsp. vanilla
1-1/2 c. powdered sugar

Directions:
Directions:
Mix together sugar and vegetable oil. Beat in eggs.

In separate bowl mix together flour, salt, baking soda & cinnamon and then add to the sugar and oil. Mix in the carrots and walnuts.

Bake @ 300º for 40-50 minutes in 13x9 inch greased pan
