1 lb. fresh catfish filets
1 stick butter
1 onion, sliced
1 T. oil
Southwest Chipotle seasoning
Directions:
Directions:
In a large cast iron skillet, heat oil and butter. Add onions, and saute' until caramelized. While the onion is cooking, sprinkle chipotle seasoning on the filets. Place filets on top of onions, and cook for 3 minutes on each side, and then place in a baking dish with onions in a 375ºF oven for approximately 5-10 minutes until filets are a little dried out.
