2 med.zucchini(shredded)(2 cups)
1 med. onion chopped
1 pkg stovetop for chicken
1 cup cheese blend
2 pkg chicken quarters (21/2Lb)
3/4 cup honey
barbecue sauce

Preheat oven 400F melt butter in saucepan. Add zucchini and onion, Cook until tender Remove from heat . Stir in the stuffing mixand cheese until blended.Insert fingers between the meat and the skin to form a pocket. Fill the pocketevenly with the stuffing, place skin side up in roasting pan.Bake 45min. or until chicken is cooked through. brush with barbecue sauce. bake 5 to 10 min. more.
