Minestrone Soup Recipe

1 1/2 lb. bulk Italian sausage
1 c. chopped onion
6 c. beef broth
1/2 c. dry red wine
10 oz. canned tomatoes with liquid
2 c. thin sliced carrots
1 c. chopped celery
1 c. ketchup
1 tsp. Italian seasoning
2 cloves garlic
2 c. zucchini, sliced
1/2 lb. tortellini, meat or cheese
1 med. green pepper, diced
1/4 c. chopped fresh parsley
salt, pepper, grated Parmesan cheese

Brown sausage, drain. Add onions and saute until tender. Add beef broth, wine, tomatoes, carrots, celery, ketchup, garlic and seasonings. Boil and simmer 30 minutes. Skim fat. Add zucchini, tortellini, green pepper and parsley. Simmer about 30-40 minutes. Season with salt and pepper. Garnish with cheese when serving.
