16 oz. cream cheese, softened
3/4 c. sugar
2 eggs
1 tsp. lemon juice
1 tsp. vanilla extract
Nilla wafers
Cherry or blueberry pie filling (optional
Directions:
Directions:
Place 1 wafer in each cupcake paper. Mix together the cheesecake ingredients. Pour 1/4 c. batter on top of each wafer. Bake at 375º for 15 - 20 minutes. Once cooled you can top with a spoonful of cherry or blueberry pie filling. Store in the refrigerator.
