Sausage and Green Chile Strata
1 lb bulk pork sausage
8 to 10 slices of white bread (or enough to cover bottom of pan and do extra layer)
Soft butter or margarine
4 cups shredded sharp cheddar cheese
6 eggs, slightly beaten
3 cups milk
½ tsp salt
½ tsp dry mustard
1 small can of green chilies, drained, rinsed, seeded, and chopped

Crumble sausage in medium skillet—cook over high heat, stirring frequently until meat is browned. Drain off excess grease; set aside. Remove crusts from bread; lightly butter one side of each slice and cut into cubes. Place half the bread cubes in bottom of buttered 9 x 12 baking dish (you can use a slightly smaller dish—the size of your dish will determine how many bread slices you’ll use); sprinkle with half the cheese and cover with the fried sausage. Place remaining bread cubes over sausage and top with remaining cheese.

Combine eggs, milk, and seasonings; pour over cheese and bread cubes. Cover and refrigerate several hours or overnight (overnight is best). Before baking, spring with chopped green chilies. (This can be frozen at this point. If so, put in refrigerator day before going to use and let set overnight.) Bake uncovered at 350 degrees for 1 hour or until golden brown and set. Easier to servie if allowed to sit 10 minutes before cutting.
