2 1/2 cups flour
1 1/4 cups sugar
1 teaspoon salt

2 tsp baking powder
2 C.chopped pecans (freshly shelled if poss.)
2 larges eggs or 3 small eggs
1 cup plus 1 tablespoon milk

1 loaf pan well greased or a 1 1/2 qt. casserole dish.


Directions:

Sift the dry ingredients into a large bowl and add pecans.
In another bowl, vigorously beat eggs. When they are thick and frothy, add milk.
Stir the beaten egg mixture into the dry ingredients.
Pour batter into a well-greased loaf pan or a 1 1/2 qt. casserole dish.
Preheat oven to 350, Bake for 1 hour.
Remove from pan and cool on wire rack.
