Dough:

disolve 1 package yeast in 1/4 cup water

1 cup milk (scalded)
1/4 cup sugar
1 teaspoon salt
1 beaten egg
1/4 cup shortening
4 cups flour

Directions:
Directions:
Scald milk. Add sugar and salt - cool to warm. Add yeast. Add 2 cups of the flour and beat one minute. Add eggs and beat until smooth. Add shortening and beat one minute. Add rest of the flour until a nice soft dough. Then let rest
10 minutes; and knead on floured surface until smooth ( about 5 minutes). Cover and let rise to double. Knead down again and let rest 10 minutes. Then take about a 7 ounce ball or about the size of a baseball - roll almost as thin as
pie crust. Fit into an 8 inch pie pan. Then arrange fruit of choice on top. The crust should come up the sides of the pan too. Then add about 3/4 cup of
cream mixture. Bake at 350 for 1/2 hour or until filling is set and doesn't jiggle in the middle.

Filling: to each cup of cream add 2 eggs and 1/2 cup sugar (about 3 cups
cream, 6 eggs and 1 and 1/2 cup sugar)

After baking: sprinkle with a mix of sugar and cinnamon
