1 package (4 servings) of lIme Jello, can use sugar free
2/3 cups boiling water
1/2 cup cold water
Ice cubes
2 Tblsp cream de menthe*
2 Tblsp shite cream de cacco*
3 1/2 cups light cool whip topping
2 cups crushed grasshopper cookies or thin mint cookies

* can use peppermint extract as a subsititute

For crust:
Combine melted margaring and cookie crumbs and press into the bottom of a 9 inch pie pan and bake for 10 to 15 minutes, at 350 degrees.
Set aside to cool.

For pie filling;

Completely sissolve the gelatin in boiling water.
Stir in cold water adn ice cubes until slightly thickened (coats a spoon).
Remove unmelted ice.
Fold liquors into whipped topping.
Use a wire wisk, blend whipped topping mixture into the gelatin and whip until smooth.
Chill until the mixture is firm (30 mins).
spoon int he the prepared pie crust and chill 2 hours before serving.
Garnish with fresh mint if desired.
