1 cup plain sifted flour
1/2 cup brown sugar
1 tsp of baking powder
1/2 tsp of baking soda
1/4 cup pecans (chopped fine)
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup apricots, diced small
1/4 cup rum
2 eggs
2 tbsp butter (not margarine)

Directions:
Directions:
Put all fruit in measuring cup with rum, let soak. In bowl beat 2 eggs lightly, add butter, brown sugar. Beat until sugar dissolves. To that mixture add flour, baking powder, & baking soda, a pinch of salt. Add fruit mixture and mix well. Use deep loaf pan, approx. 8x3 1/2. Bake 300º about 1 hour or until done. Check with tooth pick.
