Marinade:1/2tsp fresh ground lemon peel
2tbsp fresh lemon juice
2 tbsp olive oil
1tbsp flat leaf parsley
1 tsp oregano
1/2tsp diced garlic
1/2tsp salt and 1/4 tsp pepper
1 lb.swordfish cut in length cubes
2 medium size yellow squash (6oz each) cut into 12 chuncks

12 large mushrooms cut in half
4 scallions cut in 1 inch pieces
12 cherry tomatoes

Have 10 in or longer metal skewers ready.

Mix marinade in bowl add swordfish and coat.Let stand at room temp. 25 to 30 min.
Heat grill or broiler
Thread fish on 4 skewers,squash on 2 skewers.
half mushrooms and scallions alternately on 2 skewers.

Brush veggies with remaining marinade.
Grill or broil fish and veggies.$ to 6 inches from the heat. turn occasionally. Fish 6 min.or until almost opaque in center. veggies 3 to 4 min. Remove fish and veggies from skewers to plate.ENJOY!!
