4 large russet potatoes - boiled until tender
8 hard-boiled eggs
1 large onion, diced
mayonnaise - lots & lots
salt & pepper to taste

Directions:

Use a large bowl. Peel warm potatoes and cut into bite sized pieces; add hard-boiled eggs which have been peeled and diced. Add onion, and lots of salt and pepper. Mix all ingredients with mayonnaise. This will take a lot of mayonnaise, because the warm potatoes will absorb it. Continue to add mayonnaise and mix until you think you have added a too much mayonnaise. Place in a serving dish and sprinkle the top with paprika. Refrigerate for several hours. You many need to add a little more mayonnaise after it has been completely chilled.

Make as much as you like by just adding 2 eggs for every potato, and one onion for every 4 potatoes. Use a good quality mayonnaise, NEVER use salad dressing!
