1 marinated pork tenderloin
1 box stuffing mix
1/2 c. nuts (pine nuts or walnuts)
1/2 c. chopped mushrooms
herbs and spices to taste (thyme, oregano, rosemary, parsley, garlic, cayenne)

Directions:
Directions:
Line a 9" round or 9" square pan with foil. Place loin in center and butterfly. Mix up stuffing mix according to its directions and add nuts, mushrooms, and herbs. Spice loin to taste. Spoon stuffing into butterfly and around loin. Bake at 350ºF for about 45 minutes per pound or until desired color of pork is reached. Careful not to let the stuffing burn!

I usually don't have it in the kitchen, but sage would be nice in the stuffing as well. I don't always pepper the loin; it just adds a nice zing if not used too heavily.
