8 c. water, 2 lbs. dried navy beans (about 4 cups), 2 medium onions, 1/2 lb. cooked ham cut into small pieces, 1/2 c. packed brown sugar, 5 T. molasses, 1 tsp. salt, 1/2 tsp. dry mustard, 1/4 tsp. pepper, chili powder to taste, onion powder to taste, 8 pieces of cooked bacon, crumbled, 1 large can tomato paste.

Heat water and beans to boiling in Dutch oven; boil 2 minutes. Remove from heat; cover and let stand 1 hour. Add enough water to beans to cover if necessary. Heat to boiling; reduce heat. Cover and simmer until tender, 1-1 1/2 hours (do not boil, or beans will burst). Drain beans, reserving liquid.

Layer beans, onion and pork in Nesco roaster. Mix brown sugar, molasses, salt, mustard, pepper, spices as desired, tomato paste and reserved bean liquid; pour over beans. Add enough water to almost cover beans. Cover and cook in the Nesco, stirring occasionally for 3-4 hours. Uncover and cook until beans are desired consistency, and liquid is reduced. Taste throughout the day, adding spices and liquid as needed. (I usually cook all day).
