2 peppers, red, green, or yellow
4 stalks celery
1 bunch broccoli
2 med zucchini
1 lb mushrooms
1/2 c salad oil
1/2 c olive oil
1/2 c tarragon wine vinegar
1/4 c sugar
3 cloves garlic minced
1 tbsp salt
1 tbsp mustard

Chop all vegetables into bite size pieces.
Mix the rest of the ingredients until sugar is dissolved. Pour over vegetables and mix well. Refrigerate overnight.
