Worcestershire sauce 1/4 c. light-brown sugar 4 tsp. low-sodium soy sauce 2 c. fresh crumbled bread 1/2 c. milk 2 medium onions, 1 sliced into rings and 1 finely chopped 2/3 c. finely chopped celery 1 T. finely chopped garlic 1/4 c. finely chopped parsley 1 T. dry mustard 2 tsp. fresh thyme, plus 8 sprigs 3 large eggs 2 tsp. kosher salt 1 tsp. black pepper 1 1/2 lbs. ground beef 1 lb. ground pork 1/2 lb. ground veal 6 slices bacon
If you prefer to omit veal, just add 1/4 lb. of beef.

Directions:Heat oven to 400ºF. Stir the ketchup, Worcestershire sauce, brown sugar, and soy sauce together. Set the ketchup sauce aside. Soak the bread in the milk for 5 minutes. Combine the chopped onion, celery, garlic, parsley, mustard, chopped thyme, eggs, salt, and pepper in a large bowl. Add the soaked bread, meat, and 1/3 cup of the ketchup sauce and toss gently with your hands just until the mix will hold its shape. Transfer to a nonstick pan, form into a 16- by 5- inch loaf, and coat with 1/3 cup of the ketchup sauce. Toss the onion rings with 2 tablespoons of ketchup sauce and place them and the thyme sprigs over the meatloaf. Top with the bacon slices and bake for 15 minutes. Reduce temperature to 350ºF and bake until the internal temperature reaches 160ºF - about 50 more minutes. Let cool for 15 minutes. Serve with remaining ketchup sauce. |
