1 Pkg. Yellow Cake Mix
1 20 oz. can crushed pineapple
1/2 c. granulated sugar
2 - 3 oz. pkgs. instant vanilla pudding
3 cups milk
1 1/2 cups whipping cream
1/4 cup powdered sugar
1 tsp. vanilla
1/2 cup coconut flakes, toasted

Directions:
Bake cake according to package directions in a 9x13 greased and floured pan. While cake bakes, combine pineapple, juice and sugar in a saucepan. Cook over medium heat, stirring often, until thick and syrupy (about 20 minutes). When cake is baked, remove from oven and pierce top with a fork at 1 inch intervals. Pour pineapple mixture over cake and spread. Cool completely. In a medium bowl, combine pudding mix with milk. Blend until thick. Spread over cake. In a medium bowl, beat cream until soft peaks form. Add powdered sugar and vanilla; continue beating until stiff. Spread over cake. Sprinkle with coconut and refrigerate 24 hours. Keeps well. Note: to toast coconut, spread on a cookie sheet and toast at 350º for 7 minutes, or until lightly browned.
