5 or 6 Granny Smith apples
3/4 to 1 c. sugar
2 T. flour
1/2 to 1 tsp. cinnamon
dash ground nutmeg
lemon juice
2 T. butter
Pastry for 2-crust 9 inch pie

Directions:
Directions:
Peel, core and slice apples. If they lack tartness, sprinkle with lemon juice. Add sugar, spices and flour. Place in bottom crust. Dot with small bits of butter. Add top crust and seal edges. Slash top to allow steam to escape and sprinkle with a bit of water and sugar. Bake at 450º for 15 minutes. Reduce heat to 350º and bake for 30-45 minutes more. Pie is done when knife inserted through slash in top feels no resistance (apples are done).
