¾ C Shortening
½ C Brown sugar
1 1/2 C White sugar

3 Eggs
1 1/2 tsp. Vanilla
1 1/2C Mashed bananas

2 1/4C Cake flour
1 ½ tsp. Baking Powder
¾ tsp. Baking Soda
¾ tsp. Salt

6 T Buttermilk

Directions:

Cream in large mixing bowl the shortning and sugars. Beat two mimutes. Add eggs, vanilla, and bananas. Beat 1 minute. Sift dry ingredients together and then fold into creamed mixture,
alternating with buttermilk.
Bake in layers for 20 min @ 375 degree oven

I made this cake for my son Christopher for his first birthday. He has asked for it every year since then, for 33 years! Because his birthday is in August we often make home made vanilla ice cream to serve with it. (I actually make it as a sheet cake instead of layers.)
