Steamer clams (about 1/3 # per person)
3/4 - 1 stick butter
2 tblsp minced garlic (or more)
2 shallots, chopped fine
lots of lemon zest
3/4-1 cup white wine
1/4 tsp each fresh (or dried) herbs...lemon thyme, chives, basil, oregano, english thyme.

Melt butter in large deep frying pan. Saute garlic, shallots, and lemon zest and herbs in butter for 2-3 minutes. Stir in wine. Simmer for 5 minutes or until the wine is cooked down a bit. Scrub steamers to remove grit and sand. Rinse in cold water.
Place the steamers in the wine/butter/herb mixture and cover. Steam until the clams open. Pour all into a large bowl (including broth)
Serve with crusty french bread. Dip the bread into the broth and slurp the clam right out of the shell. Have plenty of napkins available!
