2 lbs mussels, cleaned
1 jalapeno pepper, seeds removed and diced
1 shallot, minced
2 cloves garlic, minced
2 tbs olive oil
1 tbs butter
2 tbs oregano
1 tsp red pepper flakes
2 tbs capers
1 bunch scallions, chopped
3 cups tomato sauce

Directions:
Directions:
In a non-stick skillet over medium heat, add olive oil. Add shallots and the white part of the chopped scallions. Add jalapeno pepper and garlic. Saute for about 3 minutes until everything is starting to lightly brown. Add tomato sauce, oregano, and red pepper and mix in well. Cover and simmer for 2 minutes. Add butter. Once butter is melted, add mussels, and tightly cover the pan. Kepp lid on for about 5 minutes, or until mussel shells are open and they are cooked through. Mix in remaining chopped scallions, and serve hot.
