Pour drippings into a measureing cup
(for every oz. of drippings use equal amount of flour or corn starch).

Start with no heat:

Pour drippings and flour into pan on stove, mix with spatula until smooth.
(For every oz of drippings use 1 cup of water or broth)
Slowly add 1/2 of the water cold, once mixed, turn on heat on stove and stirring constantly add rest of broth or hot water.

Half goes in cold, then the rest goes in hot.
